In Paris it is generally better to keep away from the touristy type cafes and head for brasseries frequented by the local Parisians. These brasseries or cafes may look less appetising from the outside, but you'll usually be rewarded with better quality food.
The best types to head for are those that do a 'Plat du Jour' or plate of the day. More often than not these meals will be cooked fresh on the day and to a local recipe made with fresh meats or vegetables.
In more fomal restaurants, the menu is the best bet, especially if its made up of local specialities. Ask the sommelier or wine waiter's advice on the best wine to accompany the meal.
